Vinification

Virgo refers to the first ever harvest from the Hetny vineyard palnted in 2015. After several picking days the the grapes are gently pressed with a pneumatic press. The juice ferments and ages in stainless steal. Bottled unfined, unfiltered with a pinch of SO2. 2019 was a warm dry year, with significant rain towards the end of August resulting in a more delicate expression.
